docs: point install coordinates at 0.0.2 - #93

The README and guides still told readers to depend on 0.0.1 and run the 0.0.1 worker image, which no longer carries the MCP security fixes. Only the install coordinates move; the SNAPSHOT example in the operations guide is illustrative and stays. Co-Authored-By: htjulia <[email protected]>
