Exclude OpenSSL and V8 files outside deps/v8/include from the JS/MD lint checkout. Keep the V8 headers for Markdown link validation and include all other paths by default. Exclude

Keep the V8 headers for Markdown link validation, and keep all other paths included by default.This removes about 429 MiB (62%) of tracked file size, uncompressed. JS/MD linting and man page verification passed locally with the sparse checkout.
The ubuntu-slim comparison, with 128 trials per variant and caches disabled, is still in progress.
